A lot has changed in the past 10 years since the introduction of Meat-Free Monday. Principally climate change, and because of that crisis, Applewood® believes that it is no longer enough for us to follow a climate-friendly diet on just one day a week.

So that's why we are instituting another day of climate-friendly abstinence from meat and dairy products, the Flexi Friday. Following a flexitarian style diet is easy and the introduction of Applewood® Vegan into our range, means no one has to miss out on the great taste of Applewood® cheese on those two days a week that you eat a plant-based diet.

APPLEWOOD® VEGAN X SQUEAKY BEAN® SPRING SALAD


INGREDIENTS:
  • Applewood® Vegan cheese
  • Squeaky Bean® tikka chicken
  • Mixed salad leaves e.g. rocket, spinach
  • 1 avocado
  • 1 carrot
  • Cucumber

   

  METHOD

  1. Prepare your Applewood® Vegan cheese by grating and set aside for the final step.
  2. Wash your mixed salad and place in the bowl.
  3. Add grated carrot into the bowl.
  4. Cut an avocado into chunks and add it in.
  5. Thinly slice cucumber and add it to the salad.
  6. Next, sprinkle your Squeaky Bean® tikka chicken-style pieces.
  7. Finish by (generously) garnishing your Applewood® Vegan cheese over the top of the salad.
  8. Tuck in!


APPLEWOOD® VEGAN X SQUEAKY BEAN® HAM STYLE SUB ROLL


INGREDIENTS:
  • Olive spread
  • Ciabatta roll (vegan)
  • Applewood® Vegan cheese
  • Squeaky Bean® ham style slices
  • 1 Avocado
  • 1 Beef tomato
  • Sprinkle of rocket

   

  METHOD

  1. Begin by slicing your ciabatta roll down the side and spread with your chosen vegan butter.
  2. Prepare the Applewood® Vegan cheese by slicing it into chunks.
  3. Slice your tomato and place on the bottom of your ciabatta, along with the rocket.
  4. Cut an avocado into slices and layer on top.
  5. Begin layering your ciabatta with Squeaky Bean® ham style slices. Be generous!
  6. Place your Applewood® Vegan cheese on top.
  7. Optional: Wrap your sub in paper (Subway style) and add different salad / sauces.
  8. Enjoy!


APPLEWOOD® VEGAN LASAGNE


INGREDIENTS:
  • 1/2 cup lentils (100g)
  • Vegetable oil
  • 50g Applewood® Vegan cheese
  • 1 onion
  • 1 stick of celery
  • 1 carrot
  • Handful of fresh basil
  • 250ml chopped tomato
  • 75ml red wine
  • 3 tbsp vegan butter
  • 2 tbsp flour
  • 500ml non-dairy milk (we use oat) warmed
  • Salt & pepper to taste
  • 200-250g lasagne sheets
  • 1 tbsp nutritional yeast

   

  METHOD

  Preheat the oven to 180C.

  FOR LENTIL BOLOGNAISE:

  1. Soak the lentils according to package directions.
  2. Heat some oil in a frying pan and sauté the onion, celery and carrot (finely chopped). Add salt & pepper
    and basil to taste. Cook over medium heat, until golden brown.
  3. Add the wine and cook until the alcohol evaporates. Add the tomato & lentils and simmer till lentils are soft. Approximately 1 hour.

  FOR VEGAN BÉCHAMEL:

  1. Melt butter in a saucepan over medium heat. Add flour and whisk until thickened and bubbling, but not browned (approx. 2 minutes).
  2. Warm milk slightly and pour into the pan and continue to whisk until the sauce has thickened.
  3. Add salt, pepper, nutritional yeast and grated Applewood® Vegan to the pan and stir to combine.

  Layer the mince in an oven proof pan with the lasagne sheets.
  Top with béchamel sauce and top with lashings of Applewood® Vegan cheese.
  Bake in the oven at 180C for 30 minutes.
  Check, and if the knife goes through easily it is ready to serve. Otherwise cook further.
  Serve immediately.


APPLEWOOD® VEGAN OMELETTE


INGREDIENTS:
  • 250g chickpea flour
  • 100ml water
  • 1 tbsp nutritional yeast (optional)
  • 1/4 tsp salt
  • 1 tbsp turmeric
  • 100g Applewood® Vegan cheese, grated
  • 1 tbsp oil for frying

   

  METHOD

  1. Mix chickpea flour, nutritional yeast, salt and water and stir until there are no lumps.
  2. Add oil to a frying pan.
  3. Turn up the heat to medium and pour the batter in the pan like you would with a large pancake and cook for about 5 minutes until the top of the omelette no longer looks wet.
  4. Carefully loosen up the omelette with a spatula and flip the omelette to the other side. Cook for 3-5 more minutes, until it is no longer soft in the middle. Make sure there is no wet batter left in the centre.
  5. Top with grated Applewood® Vegan cheese and fold over so that the cheese is in the middle.


APPLEWOOD® VEGAN PINWHEELS


INGREDIENTS:
  • 1 roll of puff pastry
  • 150g Applewood® Vegan cheese, grated
  • 8 cherry plum tomatoes, halved
  • 120g vegan pesto

   

  METHOD

  1. Preheat oven to 200C.
  2. Line a baking tray with parchment paper.
  3. Unroll the puff pastry and lay on a flat surface, spread the pesto evenly all over, then place the tomatoes across the pastry and cover with grated Applewood® Vegan.
  4. Starting from the shortest end, carefully roll the pastry up until you reach the end and it looks like a log. Then slice it into approximately 8 servings.
  5. Place it on the baking tray and bake for about 20-25 minutes at 200C.
  6. Serve and enjoy with hummus and slices of cucumber.


APPLEWOOD® VEGAN SHEPHERD'S PIE IN A POTATO

APPLEWOOD® VEGAN CHILLI 'BEEF' ENCHILADAS

INGREDIENTS:
  • 2 tablespoons olive oil
  • 2 onions
  • 3 cloves of garlic
  • 1 orange pepper
  • 260g meat free mince
  • 2 tablespoons soy sauce
  • 2 teaspoons chilli powder (more or less depending on spice)
  • 1/2 teaspoon chilli flakes
  • 2 tablespoons paprika
  • 50ml red wine
  • 400g tin of chopped tomatoes
  • 250g passata
  • 200g sweetcorn (frozen or tinned)
  • handful of spinach
  • 25g dark chocolate (or dark chilli chocolate)
  • 175g meat free pulled 'pork' (optional)
  • 6 tortilla wraps
  • 200g of Applewood® Vegan

   

  METHOD

  1. Add oil to frying pan to heat while finely chopping onions. Add to frying pan for 5 minutes.
  2. Grate garlic and chop pepper, add to the pan and fry for a further 5 mins until the peppers are soft.
  3. Add the mince and soy sauce and fry until browned then add chilli powder, flakes and paprika.
  4. Add red wine and simmer until reduced before adding the passata and tomatoes. Simmer for 5 minutes.
  5. Add the spinach and the sweetcorn and simmer for 5 more minutes.
  6. Once the time is up, mix in the chocolate and let it melt, constantly stirring and cover.
  7. Heat tortillas and pulled 'pork' (if using).
  8. Grate Applewood® Vegan and put a thin layer on top of a tortilla, in the centre.
  9. Add the chilli mixture to the top and the pulled 'pork' (if using) then roll.
  10. Put rolls in an oven dish and repeat with the other tortillas.
  11. Top with a generous amount of Applewood® Vegan and bake at 180C for 15 minutes.
  12. Drizzle sriracha mayo on top and serve with salad and/or rice. If you have any mixture left, use it on top of nachos with even more Applewood® Vegan.


APPLEWOOD® VEGAN STUFFED POTATO SKINS


INGREDIENTS:
  • 4 baking potatoes
  • 100g Applewood® Vegan cheese, grated
  • 75g vegan bacon or ham
  • 150g mushrooms
  • 100g olives
  • 1 clove of garlic
  • 1tsp chives
  • Sprinkle of salt & black pepper

   

  METHOD

  1. Bake the potatoes until they are crisp on the outside and fluffy on the inside.
  2. Let them cool slightly, cut them in half and scoop out the insides into a bowl.
  3. Add Applewood® Vegan, vegan bacon or ham, chopped mushrooms and sliced olives, along with salt, pepper, garlic and chives.
  4. Spoon the mixture back into the potato skins, top with extra Applewood® Vegan cheese and bake for another
    10 minutes.
  5. Serve with vegan ranch dressing or your preferred dip.


APPLEWOOD® VEGAN CHEESE SCONES


INGREDIENTS:
  • 125g grated Applewood® Vegan cheese
  • 225g self-raising flour
  • 50g margarine
  • Pinch of salt
  • 1 tsp of paprika
  • 60ml milk alternative

   

  METHOD

  1. Rub flour and margarine together till form breadcrumb consistence.
  2. Add paprika, Applewood® Vegan cheese and salt, mix.
  3. Form a well in the middle and add milk, mix add a little water if needed.
  4. Lightly flour a surface and roll out the dough to approximately 2cm thick.
  5. Cut out the scones with a medium cutter and place on an oven tray. Glaze the tops with the extra milk.
  6. Cook at 200C for 15 mins or until golden.


APPLEWOOD® VEGAN PASTA BAKE


SERVES 4
INGREDIENTS:
  • 500g pasta of choice (we used wholemeal penne pasta)
  • 150g mushrooms
  • 2 courgettes
  • 100g sundried tomatoes
  • 1 small onion
  • 100g sweetcorn
  • 2 peppers
  • 100g plum tomatoes
  • 1 large clove of garlic
  • 2 packs of ready salted crisps
  • 100g Applewood® Vegan, grated
  • 2 cans of tinned tomatoes
  • Sprinkle of crushed chilli flakes
  • Dash of soy sauce

   

  METHOD

  1. Pre cook the pasta.
  2. Chop the onions, peppers, courgettes, mushrooms, olives, sundried tomatoes and plum tomatoes.
  3. Fry the onions until lightly golden, then add all the chopped vegetables and sweetcorn.
  4. Season with salt and pepper, chilli flakes and soy sauce.
  5. Stir in the tinned tomatoes.
  6. Add a clove of garlic and stir and fry until bubbling.
  7. Stir in the pasta and move to an oven safe dish.
  8. Crunch up ready salted crisps or other vegan friendly flavoured crisps and add on top of the pasta.
  9. Grate Applewood® Vegan cheese on top and cook in the oven for 10 minutes until cheese is melted and crispy.


APPLEWOOD® VEGAN & CARAMELISED ONION TOASTIES


SERVES 2
INGREDIENTS:
  • 1 medium onion, peeled and thinly sliced
  • 1 tbs olive oil
  • 1 tsp dark brown sugar
  • Salt & pepper
  • 1 tbs of good quality balsamic vinegar
  • 2 thick slices of sourdough bread
  • 4 slices of Applewood® Vegan

   

  METHOD

  1. Heat the olive oil in a large frying pan over a medium heat. Add the onions, dark brown sugar and season with salt and pepper. Stirring regularly, fry for 5-6 minutes, until softened and lightly coloured.
  2. Add the balsamic vinegar and continue to cook for a further 5 minutes until the onions are well coloured, sweet and tangy. Check and adjust the seasoning if required.
  3. Preheat the grill to high.
  4. Toast one side of each slice of bread. When golden remove from the grill and turn over the bread.
  5. Spread half of the caramelised onions over the un-toasted surfaces, top with the Applewood® Vegan slices and remaining caramelised onions. Return to the grill until the cheese is melted and nicely coloured, approximately 4-5 minutes.
  6. Serve immediately with a salad.


APPLEWOOD® VEGAN SPINACH AND PINE NUT STUFFED PEPPERS


MAKES 3 PEPPERS
INGREDIENTS:
  • 2 heaped tbs pine nuts
  • 1 onion, peeled and chopped
  • 1 garlic clove, peeled and finely chopped
  • 1 tbs olive oil, plus extra for drizzling
  • 3-4 large handfuls of fresh spinach, washed and drained
  • 250g ready cooked rice
  • 150g Applewood® Vegan, grated
  • 3 peppers
  • 400g can chopped tomatoes
  • 1 tbs fresh basil, chopped or 1 tsp dried basil

   

  METHOD

  1. Cut the tops off the peppers, remove and discard the seeds and pith from each. Retain the tops (lids). Trim the bottom of each pepper, if necessary, to ensure they stand up.
  2. Heat a frying pan over a medium heat and dry fry the pine nuts until nicely golden. Transfer to a plate and set aside.
  3. Preheat the oven to 180C fan.
  4. Return the pan to the heat and add 1 tbs olive oil. Saute the onion and garlic for 4-5 minutes until slightly coloured and softened. Next, add the spinach and wilt, stirring occasionally, approximately 3-4 minutes. Season well and add the cooked rice breaking up any lumps with the spoon, heat for a few more minutes until piping hot.
  5. Add the grated Applewood® Vegan to the rice mix and check the seasoning, adjusting if required. Pile the stuffing into each of the peppers making sure it's well packed in. Place the stuffed peppers into an ovenproof dish and top each with its lid.
  6. Prepare the tomato sauce but simply mixing the chopped tomatoes with the basil and season to taste. Heat the sauce up in the frying pan before pouring it into the dish around the base of the tomatoes. Drizzle a little olive oil over each of the peppers.
  7. Place in the preheated oven for 25-30 minutes. The peppers should be tender and slightly coloured. Transfer each pepper to individual serving plates and spoon a little of the tomato sauce with each before serving.


APPLEWOOD® VEGAN SMOKY NACHOS


INGREDIENTS:
  • 100g Applewood® Vegan cheese, grated
  • 4 ripe tomatoes
  • 1 red onion
  • 1/2 red pepper
  • 1/2 bunch of coriander, roughly chopped
  • Juice of 1 lime
  • Avocado
  • Tortilla chips
  • Salt & Pepper

    

  METHOD FOR SALSA

  1. Finely dice the tomatoes, pepper and onion
  2. Mix all the ingredients in a bowl and add coriander
  3. Add juice of a lime and season to taste


  COMBINE

  1. Slice up the avocado and crush it lightly
  2. Layer the tortilla crisps with salsa, avocado and Applewood® Vegan cheese
  3. Place it in the oven for 10 minutes at 180C, then grill for 2 minutes to really melt the cheese


APPLEWOOD® VEGAN SMOKY MAC AND CHEESE


SERVES 4
INGREDIENTS:
  • 350g macaroni
  • 200g grated Applewood® Vegan cheese
  • 1 litre of milk alternative
  • 100g margarine
  • 85g self-raising flour
  • 1 1/2 tbsp nutritional yeast
  • 3 garlic cloves
  • 1/2 bunch of thyme
  • 40g breadcrumbs
  • 1 shallot finely diced
  • Salt
  • Pepper

    

  METHOD

  1. Cook the macaroni pasta
  2. Heat up milk with thyme and garlic until boiling
  3. Pass it through a sieve to remove thyme and garlic
  4. Melt the margarine and add flour - making a roux
  5. Slowly add the milk and bring it back to the boil whisking it the whole time
  6. Fry the onion
  7. Take it off the heat and add half of the Applewood® Vegan cheese, nutritional yeast, breadcrumbs, onion and season to taste
  8. Coat the macaroni in the sauce
  9. Sprinkle the rest of the Applewood® Vegan cheese on top
  10. Cook in the oven at 180C for 20 - 25 minutes until hot in the middle

APPLEWOOD® VEGAN WELSH RAREBIT


MAKES 4 SLICES
INGREDIENTS:
  • 200g grated Applewood® Vegan cheese
  • 2 tbsp milk alternative
  • 2 tbsp beer
  • 1 tsp cayenne pepper
  • 4 slices of bread

    

  METHOD

  1. Mix all the ingredients together
  2. Grill one side of the bread
  3. Spread the mixer on the other side of the bread and grill until cheese is golden brown

APPLEWOOD® VEGAN DELUXE BURGER


MAKES 4 BURGERS
INGREDIENTS:
  • 400g can chickpeas
  • 200g can sweet corn, ideally with mixed peppers
  • 1 medium onion, peeled and chopped
  • 1 large garlic clove, peeled and finely chopped
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 handful of fresh coriander, washed and chopped
  • 3 tbs plain flour, plus a little extra for shaping
  • 1/4 tsp salt
  • Oil for frying
  • 4 of your favourite vegan burger buns
  • 4 slices of Applewood® Vegan
  • Slices of tomato, salad leaves and relish

   

  METHOD

  1. Drain the chickpeas and corn and tip both into a food processor, then pulse until they breakdown but there is still some coarse texture. Transfer to a large mixing bowl.
  2. Heat a little oil in a frying pan and saute the onion for 2-3 minutes before adding the garlic. Cook for another minute, and then add the spices and fry for one more minute
  3. Add the fried spice mix to the chickpeas and corn.
  4. Add the fresh coriander, flour and salt to the mix everything together with a fork.
  5. Divide the burger mix into 4 equal portions and, using floured hands and on a lightly floured board, shape each into burgers approximately 8-9cm in diameter and 2cm thick.
  6. Place the burgers onto a plate, cover with cling and chill for at least 20 minutes.
  7. When you're ready to serve, heat a little oil in a frying pan and cook the burgers over a medium heat for 3-4 minutes on each side until golden brown and piping hot
  8. Place the burgers onto the bottom of the buns, top with Applewood® Vegan slices, tomato, salad and relish.
    Top off the bun and enjoy!
